Steaklocker is for advanced carnivores only. The device lets you safely dry-age steaks at home, meaning you can get your delicious meat fix at a fraction of the price of pre-aged steaks.
Dry ageing is a process where large cuts of beef are aged for weeks if not months before being trimmed and cut into steaks. The process helps to develop the meat’s flavour and makes it more tender than it would be straight from the cow. This process has usually required lots of space and precise temperature and humidity control, so has often been the reserve of expensive steak restaurants — with high-end fridges and humidors costing upwards of $5,000 (£2,900).
Well now you can do all of the ageing in your own kitchen thanks to the Steaklocker, which can be pre-ordered on Kickstarter for $555 (£327). You just need to buy a slab of meat from the butcher and shove it inside the cabinet. A patent-pending digital hygrometer (humidity measure) lets you adjust the recommended settings to vary the outcome. A spectrum UVC lamp makes sure that bacteria don’t proliferate in the meat.
The team behind Steaklocker is building a smartphone app for the dry age fridge, using realtime sensors and a controller to tell you how your meat baby is gestating. The app also features instructions, recipes, supplier information and recommended steakhouses as well as a customer service phone number.
The Steaklocker team claims that by drying your own delicious cuts, you can save between 50 and 70 percent on retail prices. Although at 34-inches in size (accommodating up to 30 kilos of animal flesh), it’s quite the commitment (or, should we say, commeatment).
